The whole process of workmanship is exclusively performed by hand. The product is washed, cleaned from its seeds and it is ready for a second washing. Afterwards it is acidified in a solution of water and vinegar, spin-dried and is filled with a tuna stuffing. The product is finally put into glass jars, filled with oil, pasteurized and labelled.
